Day 1-2 : Hanoi Capital arrival & tour around

Discover the sights, tastes and smells of Vietnam’s busy capital.

Meet your private guide and driver as you arrive into Hanoi airport this afternoon, then travel the short distance to your city centre hotel. Today you’ll have a chance to explore the local area at your leisure, taking in the sights, sounds and smells of this cultural hub.

This morning you’ll begin your introduction to local street food with your guide. As you stroll through the narrow lanes you will sample traditional Vietnamese dishes such as pho (rice noodle and beef soup), banh xeo (savoury pancakes), bun cha (fresh rice noodles with grilled pork and herbs) and hoa qua dam (fresh fruits). For the more brave among you, why not try the local delicacy of vit lon (duck embryo)? Stop off at the local fresh markets to see fresh tropical fruits, an abundance of fragrant herbs, fresh meats, fresh flowers and even live fish and frogs before heading back into the Old Quarter for a fresh cup of Vietnam’s famed coffee.

 

Day 3 : Halong Bay Cruise overnight on boat
Sail through the spectacular limestone scenery of Halong Bay.

Drive out to Halong Bay, where you will board your comfortable cruise ship in the late morning and set sail into the wonderful scenery of the bay. During the afternoon you’ll disembark to explore one of the floating fishing villages that shelter in the lee of the towering karst pinnacles that stud the bay. There is also the chance to swim or hire a kayak for some personal water-borne exploration. Enjoy fresh seafood cooked by the on board chef and try your had at fishing for squid off the back of the boat.

 

Day 4-5 : Hue Imperial City
Indulge in the royal cuisine of Imperial Hue.

Disembark from your cruise this morning, heading back to Hanoi for your connecting flight down to Hue. The capital of the Nguyen Dynasty from 1802 to 1945, Hue developed a range of rich and spicy dishes destined for the royal table.

Spend a day in one of the beautiful garden houses and enjoy the surroundings while you learn the cooking techniques and ingredients used in imperial royal fare. The day kicks off with a visit to Hue’s main Dong Ba Market where Mrs Cuc, the owner of the house, who will show you how to choose ingredients and discover local specialties. Following this you’ll head back to Y Thao and start an exclusive cooking class where you will prepare four or five courses, ranging from traditional Vietnamese spring rolls to a delicious banana leaf salad. Perhaps most importantly, you get to enjoy eating them!

 

Day 6-7: Hoi An old town

Taste Vietnamese fusion food prepared by an innovative professional chef.

After driving to Hoi An along the Pass of Ocean Clouds, head to the Mango Rooms, where you will spend time with Chef Duc. You’ll experience modern Vietnamese cuisine at its finest during this private cooking class, learning to cook traditional classics with a twist from this well-travelled chef.

Get back to Vietnamese basics on the morning of day seven with an authentic introduction to pho – a rice noodle soup traditionally served with beef (pho bo) or chicken (pho ga) and eaten for breakfast. You’ll explore the markets and purchase the fresh ingredients you require before spending time with the chef, who will teach you how to make rice noodles in a traditional way. Then, you will make the beef broth – the secret of pho – a mix of beef bone, ginger and different herbs and spices that needs to marinate. The final touch is to boil the rice noodles and cook the beef pieces before you get to settle down and enjoy your flavoursome lunch.

 

Day 8-9: Ho Chi Minh city

Explore the food stands of Ho Chi Minh City on the back of a Vespa.

Fly south today as you head to Vietnam’s largest, modern city. After spending the afternoon at leisure exploring the city, you’ll embark on your most adventurous culinary experience yet – touring the street food and restaurants of Ho Chi Minh City on the back of a Vespa.

Riding pillion as the sun goes down, you’ll experience night life like a local as, together with your experienced guide, you head to some of the highlights of the Ho Chi Minh street food scene. Eat your way through the town with dinner, snacks and drinks before stopping at a Vietnamese-style coffee shop and wrapping up your evening at one of the many local clubs.

With a leisurely start after your late night, begin your tour of the downtown seafood of Ho Chi Minh City with a stop at what can only be translated as “Snail Street”. You will be presented with a huge range of tasty snail, seafood and crustacean dishes, and you are free to try whatever you like. The mussels, scallops and prawns are some of our favourites – and your guide will certainly suggest that you try the snails!

To accompany your seafood, pick up some local-style rice cakes and crackers, delicate quail eggs, corn on the cob, sliced spicy green mango and whatever else you fancy from the wandering vendors. If you have any more room, stop for a delicious seafood & vegetable “hot-pot” dish before being taken back to your hotel.

Day 10 : Mekong Delta Cruise

Visit the farming hub of southern Vietnam in the sprawling Mekong Delta.

Leave the city early this morning in a private vehicle with a driver. Today you will begin your exploration of the delta on the back of a local tri-motor cycle (xe loi), taking a ride through the lush surroundings of rice paddies and fruit farms alongside the narrow village roads.

Following this, you’ll board the charming Mango Cruise for a glimpse of delta scenery as you travel along the river, stopping off to explore local factories and cottage industries along the way. When you arrive at the lodge, you will enjoy a five-course lunch before having the chance to relax or explore some more of the delta.

Day 11-12: Ho Chi Minh & Departure

Head back to the bustling city in time for your departure.

Start your second day in the delta with breakfast at the lodge before taking a boat trip to Tai Phu canal. Continue on by bike to the busy local market of My Long and cycle to Cau Hoa to visit the local Phuoc Long Tu temple and war memorials. This afternoon, head back to Ho Chi Minh City for one final night before preparing for your morning departure.
